| 研究の経緯 | 人類が古くから利用してきた乳酸菌と酵母の機能と応用を軸に研究している。これらの微生物は、様々な発酵食品に利用され、特に乳酸菌は免疫機能をはじめ、人々の健康にも深く関与することから近年注目され、様々な機能性物質を生産することがわかってきた。 |
